Key Lime Pie at La Concha

For pie crumb shell:

  • 2 cups graham cracker crumbs
  • 1/4 pound butter
  • 2 tablespoons sugar

For filling:

  • 2 whole eggs
  • 4 egg yolks
  • 1 14 ounce can sweetened condensed milk
  • 1/2 cup key lime juice

For meringue:

  • 4 egg whites
  • 2 tablespoons confectioners’ sugar

Preheat oven to 350 degrees. Blend pie shell ingredients well, press into 9-inch pie plate. Bake 8 to 10 minutes, until lightly browned. Reduce oven setting to 250 degrees.

Mix filling ingredients thoroughly, pour into pre-baked pie shell; bake at 250 degrees for 5 minutes. Remove from oven. Reset oven to 350 degrees.

Whip egg whites and sugar until stiff peaks form. Spread meringue on pre-baked pie, working from outside rim to center to ensure that meringue seals to pie plate. Bake at 350 degrees for 3 to 5 minutes, until the meringue is golden brown. Chill thoroughly before serving.
