This traditional Scandinavian dessert has been on the menu at Nermo Hotell and Apartments since the 1930s. The dish is created by layering breadcrumbs and brown sugar with mashed apples from the garden, and topping it all with a layer of whipped cream and fresh apple pieces. Not only is this dish served at the hotel, but it is also served all over Scandinavia.

Tilslørte bondepiker (otherwise known as Veiled peasant girls) is a traditional dessert not only served at the hotel but also, all over Scandinavia. This dessert has been on the menu since the 1930s. The dish is layered with bread crumbs and brown sugar, mashed apples from the garden, a layer of ripped cream and topped with fresh apple pieces.

Local Mountain Pigs

Pigs are a tradition at Nermo Hotell and in its surrounding area for centuries. The hoteliers keep the useful, waste-reducing animals and offer them plenty of room to roam in the nearby mountains. These pigs also contribute to one of the hotel's delicacies - a cured ham recipe that has been practiced by generations from a secret recipe held secure in the hotel's safe. This specialty ham is not for sale, but reserved specifically for lucky guests.

Moose and Moose Burgers

Other longstanding traditions at Nermo Hotell extend to the local moose herd. Annual hunts to keep the population in check have, as of this year, have included six generations of the family. The hoteliers place a high value on not letting their natural bounty go the waste and have worked to create delicious stocks, stews and cuts for guests. One of their most popular summer offerings, however, are their moose burgers, as per the recipe below:

Moose Burgers (serves four)

• 500g minced moose
• 1 tsp salt
• 1 tbsp potato flour
• 1 tbsp wheat flour
• 1 egg
• ½ tsp pepper
• ¼ tsp grated nutmeg
• 1 tsp dried thyme
• ⅓ cup whipping cream
• 2 tbsp margarine for frying

1. Mix salt, flours, spices and egg into the meat until combined.
2. Add the cream gradually, incorporating well.
3. Divide the mixture into eight patties on a greased sheet pan or griddle.
4. Bake for about two minutes on each side until just cooked through.
5. Serve with vegetables, boiled potatoes and cranberry jam.
