Culinary Heritage

One Eleven

Guests are invited to take a gastronomic journey into America’s culinary heart. Developed and debuted in 2014, One Eleven celebrates the bounty of the artisan producers complemented by timeless techniques and world-class culinary influences. One Eleven offers an upscale dining menu using the finest ingredients available, meticulously prepared, and offered in a contemporary Bistro setting.

Capital Bar & Grill

The embodiment of the Capital’s “Southern Comfortable” culinary vision focuses on provincial comfort food with a particular emphasis on the agricultural abundance of Arkansas. Capital Bar & Grill is luxurious without being ostentatious and serves classic American cuisine and handmade cocktails. Signature dishes range from the now-legendary chicken fried steak and banana cream pudding to hand-crafted charcuterie.

The tools of the bar include the most sought-after liquors, mixers, and ingredients. In sort of a back-to-the-future twist, it is the devotion to handmade classic and custom cocktails (the Aviation vs. the Crop-duster) that has established CBG as a nationally-regarded spirits destination.

Suite Service

Dining is available 24-hours a day. Limited menus are found in the guestrooms but during their hours of operation, selections can be made from the menus from either restaurant.

Historic Cocktails

On April 15, 1880 General Ulysses S. Grant hosted a dinner party at the Capital Hotel. This was an 11 course feast of local foods and preparations but was most noted for 15 toasts. General Grant was a devotee of Kentucky’s Old Crow Bourbon, one of the oldest brands for which the Northern soldiers developed a taste during the war. At the prospect of 15 toasts, however, General Grant made a tactical adjustment and drank Champagne throughout. The bedrock of the Capital Bar & Grill cocktail menu include many home-grown creations, most based upon vintage preparations including a number of pre-Prohibition drinks. They include the Crop-duster – a regional take on the vintage Aviation. This cocktail includes seasonal blackberries from the famous P. Allen Smith, garden designer, conservationist, and agricultural historian and preservationist; it is very seasonal and entirely dependent upon the year’s bounty.
