The restaurant's name, “Le Cavalier” honors the deep equestrian tradition in the Brandywine River Valley and pay homage to the early 20th century when the Hotel opened. Helmed by Chef-Partner Tyler Akin, the restaurant artfully blurs the lines between approachability and elegance.
