Mohnok Mountain Griddle Cakes


  • 2 eggs
  • 2 tablespoons sugar
  • 1 ½ cups milk
  • 1 ¼ cups bread flour
  • 1 ¼ cups cake flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • Vanilla extract to taste
  • 1/8 cup butter, melted and slightly cooled

In a mixing bowl, blend eggs and sugar with a whisk; add 2/3 of the milk. When well mixed, add all dry ingredients; incorporate balance of milk slowly, scraping the bowl the whole time. Add vanilla and butter slowly, mix until smooth. Batter is better is allowed to rest overnight. Bake on hot griddle, turn only once.
