El Colegio Bar, once a quiet academic library, pays homage to the original St. Mary’s School of Law, which occupied the space beginning in 1934. The bar draws inspiration from the Prohibition era while embracing contemporary Texas-driven beverage culture. Located just off the hotel lobby, El Colegio features vintage-inspired design and an inviting atmosphere, complemented by handcrafted cocktails, premium spirits, Texas wines, local beers, and elevated bar fare rooted in regional flavors and classic favorites. The food menu is designed to complement the cocktail and wine menu. Small bites such as marinated spiced olives, rosemary & sea salt Marcona almonds are featured alongside cassic items like the old school cheeseburger, spicy chicken wings, and chipotle lime rock shrimp tacos.
