Strawberry Soup
The Middlebury Inn, located in the beautiful Green Mountains of Vermont, is a historic inn at the heart of the quintessential New England city of Middlebury. The in-house restaurant, Morgan’s Tavern, is famous for their chilled Strawberry Soup. Created by then-chef Thomas Phelps in 1978, this recipe is still made fresh every day. Although Phelps is no longer the chef at Morgan’s Tavern, he still pops his head in a couple of days a week to make sure that the inn’s dining is as memorable as when he was there.
