The first meal served in 1909 featured caviar canapes, broiled halibut with potatoes Parisiennes, Lamb Chops Monte Carlo, seasonal fresh vegetables and fruits, and desserts like coconut cake and rhubarb pie. Today, Executive Chef Jim Perillo explores the ingredients and flavors that the region has to offer and interpreting them to guests in an imaginative and varied menu. Each day begins in the bright and elegant Glimmerglass with selections from the Breakfast Buffet. A sumptuous Luncheon Buffet is served with optional seating on the Veranda. The a la carte Dinner is accompanied by a selection of fine wines. The adjacent Lobby Bar is the perfect spot for cocktails and conversation before dinner or a quiet after-dinner cordial. Guests can also enjoy the beauty of the natural surroundings from the spacious Otesaga Veranda or from the Fire Bar overlooking picturesque Lake Otsego. The casual Hawkeye Bar & Grill and adjoining Lakeside Patio feature American cuisine menu selections for lunch and dinner. The Leatherstocking Golf Grill serves casual lunch and cocktails on the patio overlooking the 18th green.
